I apologize for missing everyone last week! We decided to have our floors re-done, which involved ripping out the carpet and having all the tile removed. My advice to you is if you have tile and want it taken out – just sell your house and buy a new one. Even though I absolutely love the new look, the mess involved drove me insane. Amber can attest to how much I cannot stand things to be amiss, and I all but lost my mind while they were working on the house. Needless to say, I did not have use of my kitchen.

Amber comments: Anyone who knows April knows that her house is always spotless. Mess, just flat isn’t allowed. I always tease her about her inability to sit down and relax – but honestly, she amazes me with all she does. When I heard her floors were getting done I sent her many many encouraging texts telling her to breathe and not get too upset with the mess that it will all be over soon. Thank goodness there were no murders at her house and she didn’t spontaneously combust!

As of this week, my house is only partly put back together. I do have enough use of my kitchen, however, to do a quick blog post for you this week. It’s quick and easy, and whenever I make it, I create a double batch and share with friends. It is a much-loved treat and only takes about five minutes to make. It freezes beautifully, so if you are deciding not to share, you can put the extra containers in the freezer and bring them out when you need them.

This week, I am sharing our secret family recipe for Cinnamon Honey Butter. You can spread it on toast, biscuits, or use it instead of jelly with peanut butter. It’s delicious on a toasted bagel, pancakes, and even French toast. A dollop of this on hot cereal is heavenly! I prefer to allow it to come to room temperature before I use it, as it spreads so beautifully. I promise you will love it!

Normally, I make this with homemade butter. There is nothing better in the world, and for simplicity’s sake, we will use cubed butter that is readily available at the market. This past summer I had a dear friend come to visit our home for the first time, and he loves to tell how I “tricked” him into churning butter during his visit. He swears that I told him it only takes a few minutes, and then handed him the butter churn while I prepared dinner. I think he was stuck churning for about thirty minutes. But if you go by the grin on his face, I don’t think he minded the chore too awfully much!

Amber comments: Ah Hem! That is not the story I heard! Whilst April would like to sound innocent and sweet in this story, I gather much giggling could be heard by April’s granddaughter as the butter churn was handed over. As time went on, the poor thing couldn’t hide it anymore and all-out cackles could be heard from the child as our friend labored until his arm nearly fell off. THAT is the real story.

You will need:
1 cup of honey

2 cubes of butter (not margarine)
1 cup of powdered sugar
2 teaspoons of ground cinnamon

1. Place the butter in a mixing bowl and allow to come to room temperature.
2. Add the honey, powdered sugar and cinnamon. Mix well with an electric mixer until smooth.
3. Place in a covered container and store in the refrigerator.

If you plan on sharing, use either 1/2 cup or 1/2 pint mason jars. If you use the smaller 1/2 cup size you will get 5 portions from this recipe, with a little left over in the bowl to reward yourself when you are finished! If you have children at home, I wouldn’t package it in anything smaller than a 1 cup size. Storing in plastic containers is fine also, as long as it has a lid.

I look forward to whipping something up for you next week, as soon as my kitchen is back in perfect form. Until then, have a wonderful week, and Happy Spring!
hugs~ Ms. April
